I'm of the impression that what gets the animated adaptations are actually visual novels, for the simple reason that the stories there are already neatly packaged, so the anime writers will practically only have to select a path that they want to animate... And while the games really do have eroge content, there isn't much fanservice in terms of the typical 'pantsu shot' or 'naked apron' stuff.

Even Tokimemo ~Only Love~, an adaptation of Tokimemo Online (to some extent), has little fanservice.

It is kind of ironic though isn't it, that their nature completely flips when they become animes.

The most common objective of dating sims is to date, usually choosing from among several characters, and to achieve a romantic relationship.

If you're looking for an ecchi series, you're barking up the wrong tree with Kanon (the 2006 series at least, I haven't seen the first one).
